About the course

The IICCT Special Certificate in Cacao Evaluation and Flavour Profiling for Cacao Growing Regions is a professional training course suitable for members or staff of cacao cooperatives, commercial operations and technical or development organisations who wish to develop a deeper understanding of flavour in fine cacao, and for chocolate makers producing chocolate in cacao growing countries.

The Cacao Evaluation course will develop the sensory skills needed to assess cacao quality through its flavour and show how creating flavour and cultural origin profiles can be used to market fine cacao.

The Special Growing country version includes developing an understanding of the flavour potential of local cacao and how to improve quality through flavour profiling of cacao and chocolate.

Entry requirements

None. The Special Course is recommended for technical staff, cacao growers and chocolate makers already working in the field.

What's included

Sensorial

  • sensory preparation – understand how the different senses apply when tasting
  • creating and understanding cacao evaluation profiles
  • recognising cacao post-harvest defects through tasting

Evaluation

  • understanding the science of tasting and how this can be used in cacao quality
  • review of common approaches to flavour profiling
  • training in use of the IICCT electronic evaluation system and paper equivalents

Chocolate

  • understanding how cacao flavour is translated into chocolate flavour
  • learn about chocolate production techniques at different scales, from micro-batch to large-scale industrial and how these influence flavour

Technical

  • examine technical criteria for evaluating cacao and their relation to flavour and cacao value
  • quality control of post-harvest development through evaluation

Marketing

  • quality control of fine cacao for market development
  • marketing through flavour
  • working with small chocolate makers, adapting the supply chain
  • direct sourcing with farmers to market fine cacao to new markets

Assessment

  • the course will be assessed with a multiple choice exam and a tasting assessment

Acerca del Curso

El Certificado Especial sobre Evaluación de Cacao y Perfiles de Sabor para Regiones Productores del Instituto Internacional para la Cata de Chocolate y Cacao (IICCT, por sus siglas en inglés) es un curso de capacitación profesional orientado para socios o empleados de cooperativas de cacao, operadores comerciales, técnicos u organizaciones de desarrollo que desean desarrollar un conocimiento más profundo sobre el sabor en el cacao fino, y para procesadores que producen chocolate en países productores de cacao.

El Curso sobre Evaluación de Cacao desarrollará las herramientas sensoriales necesarias para evaluar la calidad del cacao mediante su sabor y enseñar cómo la creación de perfiles de sabor y orígenes culturales puede ser utilizado para mercadear el cacao fino.

La versión Especial para Países Productores incluye el desarrollo y compresión del potencial de sabor de los cacaos producidos en el país y cómo mejorar la calidad mediante el perfil de sabor del cacao y el chocolate.

Requisitos para Participar

Ninguno. El Curso Especial está diseñado para personal técnico, productores de cacao y procesadores de chocolate que trabajan en el cultivo.

Qué Incluye

Sensorial

  • preparación Sensorial – entendiendo cómo los diferentes sentidos se aplican al momento de degustar/catar
  • creando y entendiendo los perfiles de evaluación de cacao
  • reconocer defectos en la pos-cosecha de cacao mediante las degustación/cata

Evaluación

  • comprendiendo la ciencia de degustar/catar y cómo esta puede ser utilizada en la calidad del cacao
  • revisión de enfoques comunes para el desarrollo de perfiles de sabor
  • formación en el uso del sistema de evaluación electrónico de IICCT y su versión en papel.

Chocolate

  • comprendiendo cómo el sabor del cacao se transfiere al sabor del chocolate
  • aprender sobre las técnicas de producción de chocolate a diferentes niveles, desde micro-lotes hasta los procesos industriales de gran escala y cómo estos influyen el sabor

Técnicos

  • examinar criterios técnicos para evaluar cacao y su relación con el sabor y el valor del cacao
  • control de calidad en la pos-cosecha mediante evaluaciónes

Mercadeo

  • control de calidad del cacao fino para el desarrollo de mercados
  • mercadeo mediante sabor
  • trabajar con pequeños/medianos chocolateros y la adaptación de la cadena de suministro
  • suministro directo con productores para mercadear el cacao fino a mercados nuevos

Evaluación

  • el curso será evaluado mediante un examen de selección múltiple y una evaluación de degustación/cata
