2-day Sensory Aroma Training Workshop with Bizzarri Apothecary, Florence, Italy

A very special 2-day Sensory Aroma Training session in Florence, featuring the wonderful Bizzarri apothecary store and laboratory in Florence, an Aladdin’s cave of aromas, herbs, extracts and sensory experiences that will elevate your sensory understanding of key flavour notes found in origin chocolate.

This module will be an excellent chance to widen your sensory experience and your inbuilt flavour ‘archetypes’, which are key to the IICCT approach to chocolate flavour and our understanding of the brain science of chocolate tasting.

Included in the course:

  • More than 80 natural aroma samples
  • Classroom study of sensory aromas found in chocolate
  • Presentation by Gianni Pieralli of Bizzarri of very rare aromas and extracts
  • Group study of Bizzarri and other aroma samples
  • Visits to the Bizzarri shop
  • Special lunches in gourmet and historical locations
  • Bonus coffee tasting session
  • Dinner on the evening of 1 May (sensory pizza and gelato tasting!)

    • Morning classroom introduction, aroma chemistry and sensory
    • Lunch at Enoteca Alessi, a great location for wine, olive oil and chocolate!
    • Guided visits to Bizarri (in several groups due to size of shop)
    • Sensory coffee experience at Ditta Artigianale
    • Evening meal – sensory pizza experience with Pizzeria Giovanni Santarpia
    • Late night gelato treat

2 May 2022

    • Morning classroom session – archetype development
    • Defects session – understand the bad to know the good!
    • Lunch at Rivoire, historical chocolate location in Piazza della Signoria
    • Afternoon classroom – recognising aroma archetypes in chocolate
    • Matching aroma and flavours with chocolate
    • Group dinner options (not included in price)

Accommodation

Hotel accommodation in Florence is not included in the price of this course, however, there will be an option for a special price in a chain hotel, details to follow.

Combine with Level 3 field trip

If you are also attending our Level 3 Italian Chocolate Tour program on 4 – 8 May you can combine this special sensory workshop with Level 3 for a total Italian chocolate sensory experience. If you attend both programs, we will include train travel to Milano on 4 May from Florence, for the transfer of locations. 3 May is a free day to enjoy Florence. About the course

This module will be an excellent chance to widen your sensory experience and develop your inbuilt flavour ‘archetypes’, which are key to the IICCT approach to chocolate flavour and our understanding of the brain science of chocolate tasting.

This module is supplemental to our Chocolate Tasting program and will form part of the learning development that will be used for our more advanced level programs.

Entry requirements

The Sensory Aroma Training Workshop is open to anyone, there is no eligibility requirement.

There will be a short assessment at the end of the course, which will include a multiple choice and sensory element. Certificates will be given to attendees passing the assessment after the course has completed and the assessments have been marked and checked. (This may take several weeks after the end of the course).
